Ingredients

1/8 cup olive oil
1/8 cup butter
1 teaspoon grated fresh ginger
¼ cup sliced almonds
¼ golden raisins
1 pound fresh baby spinach
¼ teaspoon salt
¼ teaspoon black pepper

  1. Heat the olive oil and butter in large skillet over medium heat.
  2. Add the almonds, raisins and ginger. Sauté until nuts are golden brown and the raisins are plump, about 3 minutes.
  3. Increase the heat to medium high and slowly add the fresh spinach. (NOTE: You don’t want to overfill the skillet with spinach because this will make it difficult to stir/toss.) (NOTICE: The spinach will wilt very quickly.)
  4. As the spinach wilts, add the salt and pepper. Stir will to blend all of the ingredients.
