Ingredients
1/8 cup olive oil
1/8 cup butter
1 teaspoon grated fresh ginger
¼ cup sliced almonds
¼ golden raisins
1 pound fresh baby spinach
¼ teaspoon salt
¼ teaspoon black pepper
Directions
- Heat the olive oil and butter in large skillet over medium heat.
- Add the almonds, raisins and ginger. Sauté until nuts are golden brown and the raisins are plump, about 3 minutes.
- Increase the heat to medium high and slowly add the fresh spinach. (NOTE: You don’t want to overfill the skillet with spinach because this will make it difficult to stir/toss.) (NOTICE: The spinach will wilt very quickly.)
- As the spinach wilts, add the salt and pepper. Stir will to blend all of the ingredients.
