Ingredients
3 (14.5 to 15 oz) cans of small whole potatoes
1 (8 oz) pack of Velveeta Pepper Jack Cheese
Directions
1. Pour all three cans of potatoes into a sauce pan, (liquid included,) and turn burner to high heat.
2. Bring the potatoes to a boil, then, reduce heat to medium high to control boil. Allow the potatoes to boil for about 10 minutes.
3. Meanwhile, remove the pepper jack cheese from the package and cut into several chunks.
4. Now, reduce heat to medium low, then strain off the majority of the liquid from the sauce pan.
5. Now, add cheese and stir until dissolved and blended with the potatoes.
NOTE: Make a smaller batch by using 2 cans of potatoes and 2/3 packet of pepper jack cheese or make dinner for two by using 1 can of potatoes and 1/3 packet of pepper jack cheese.
* Makes a great side dish with beef, pork or chicken.
