Ingredients
one (9 inch) pre-baked deep dish pie shell
3 to 4 tomatoes (peeled and sliced)
10 fresh basil leaves, chopped (okay to substitute with dried chopped basil leaves)
½ cup shallots/green onion (chopped)
salt
black pepper
1 cup grated cheddar
1 cup grated mozzarella
1 cup mayonnaise
NOTE: Preheat oven to 350 degrees F.
Directions
- Blanch your tomatoes, then, slice them. Afterwards, place the slices in a colander to drain juices.
- Now, place a layer of tomato slices, some basil and shallot in the pie shell. Then, place a second layer of tomato slices, the remaining basil and shallot in the pie shell and sprinkle just a little salt and black pepper on the tomatoes.
- Combine cheddar, mozzarella and mayonnaise in a bowl and mix well. Then, evenly spread the mixture on top of the tomato pie.
- Bake in the oven for about 30 minutes or until lightly golden brown.
Prep time: 20 minutes - Yield: 6 to 8 servings.
