Ingredients
12 oz. Red Onion
4 oz. Garlic
16 oz. Canned Corn
4 oz. Jalapeno Pepper
12 oz. Red Bell Pepper
12 oz. Kale
16 oz. Tomato
24 oz. Pasta Sauce
4 oz. Whole Grain Pasta
4 oz. Raw Cashews
1 oz. Delicious Dietician Italian Seasoning
Directions: Saute onion, garlic, and corn in a large skillet on medium heat for 5 minutes in low sodium vegetable broth. Add the jalapeno, bell pepper and kale and seasonings to the skillet and cook for 3 minutes. Add the diced tomato and pasta sauce to the vegetables. Ladle the sauce over the pasta and top with the cashews. Enjoy!
