Ingredients:
8 Tablespoons Flour
1 stick of butter
2 cans of beef consomme
2 finely chopped celery
3 large onions, finely chopped
5 Green onions
2 bay leaves
1/4 teaspoon thyme
2 garlic minced
2 14oz cans of artichoke hearts undrained
1/4 teaspoon of Tabasco
1 cup of dry wine
1 4 oz. carton of light cream
2 tablespoons of parsley minced
Method:
Melt the butter in a large, heavy pot and add the flour.
Over a medium heat, cook for 5 minutes, stirring constantly.
Slowly add the comsomme and when well stirred, add the celery, onions, green onions bay leaves, thyme and garlic.
Let this simmer for 45 minutes.
Chop artichoke hearts, then add the artichoke water from the can.
Cook at low simmer for another 30 minutes.
Add salt, pepper, Tabasco, wine cream and bring to a simmer.
The bisque is now ready to serve!
