Pumpkin Polenta
1c instant polenta

1 14oz can pumpkin puree

3c vegetable stock

 

½ tsp red pepper flakes

1 tsp dried oregano

1 tsp dried thyme

1 tsp dried basil

1 tbsp extra virgin olive oil

Salt and pepper to taste

 

Bring stock to boil over medium heat.  Stir in pumpkin puree.  Stir in polenta and remove from heat.  Stir in herbs, season with salt and pepper, drizzle olive oil over the top.
