- 8oz. Fleur de Teche (Louisiana triple cream cheese made by Bittersweet Plantation Dairy) cut into 8 wedges
- Golden Beets
- Passion Fruit Dressing
- Edible Flowers
Presentation
Fan out 5 slices of golden beets in the center of the plate top with one piece of pickled watermelon, wash the frisee salad and roll loosely into 2.5 inch balls and place on top of the watermelon, arrange 2 wedges of the cheese across from each other on the side of the watermelon, drizzle the frisee with the passion fruit dressing and garnish with the edible flowers.
Pickled Watermelon
Ingredients
1/4 cup water
1/2 cup red wine vinegar
1/4 cup sugar
1/4 teaspoon tarragon
Pinch of pickling salt
Slice watermelon into 1 inch thick slices and use a 3 inch round cutter to cut out disks.
