2 acorn squash
1/4 cup butter, divided
1 medium onion, chopped
3/4 cups chopped pecans
1 tsp. dried marjoram
1/4 cup maple syrup
3/4 tsp. pepper
1. preheat over to 400. Cut squash in half crosswise, scoop out and discard seeds. Sprinkle lightly with salt. Place squash halves cut side up in baking pan. Back 20 minutes. Remove from oven; leave oven on.
2. In medium skillet melt 2 tablespoons of butter. Add onion; cook and stir 2 minutes. Stir in pecans and marjoram; cooke 2 minutes more. Remove from heat. Stir in remaining 2 tablespoons butter, maple syrup and pepper. Spoon mixture evenly into squash shells.
3. Bake 10 or 15 minutes more until squash is tender
