Jon's Cajun Green Beans

Ingredients:
2 pounds green beans (fresh is best, but frozen will work)
4 ounces tasso (half a standard package)
2 cups Cajun Trinity (that's minced onions, bell peppers and celery, if ya ain't from these parts)
1/2 cup sliced almonds

Method:
Snap the tough ends off fresh green beans, then put them in a pot with enough water to BARELY cover them.
Chop the tasso into small pieces and stir into the pot, then stir in trinity.
Season with as much salt and pepper as you like.
Bring it to a rolling boil, then lower heat to simmer.
Let it cook slowly for at least 90 minutes (or more, if you like).
Top with sliced almonds and serve.
