1 box couscous ,or ¾ cup bulk , cooked
½ red onion diced
1 – 2 cups cherry tomatoes, cut
in half
2 cucumbers, seeded, diced
Handful each of mint, parsley, cilantro
& basil, chopped
3 Tablespoons balsamic vinegar
¼ cup olive oil
juice of 1 lemon
Salt & Pepper to taste
Heat 2 cups water to boil. Add couscous,
cover and remove from heat.
Once water is absorbed, add all ingredients.
Toss, season to taste
