Gloria Watt's Sweet Potato Sauce

Ingredients

1 stick of butter
½ cup of pecan halves
1/8 cup (2 level tablespoons) of Gold Medal Wondra flour
1/8 cup (2 level tablespoons) of white granulated sugar
1 level teaspoon of cinnamon
29 ounce can of Bruce’s Yams

Open the can of yams. Then, pour the yam juice/syrup into a measuring container capable of holding over one cup of liquid. You should get just over a cup of syrup from the can of yams.

Directions

  1. On medium heat, melt one stick of butter.
  2. Add pecans and sauté for 1 minute.
  3. Turn heat to high and add flour, sugar and cinnamon. Stir continuously for 1 minute.  
  4. Now add the syrup and stir to incorporate the juice into your mixture. Bring the sauce to a boil, then immediately, reduce heat to medium low.
  5. Add the yams and simmer for about 5 minutes.

Perfect side dish for any holiday meal.
