Subject: MawMaw's Macaroni and cheese

2 Boxes (~16 oz total ) of #7 Macaroni (or you can use spaghetti, but then it's not macaroni!)
2-16 oz. bags of Mild cheddar cheese already grated
1-15 oz. Bottle of Classico Alfredo Sauce (optional)
Butter
Non-stick cooking spray (like Pam)
1 large can of Pet milk or carnation milk or Half and Half just NOT condensed milk (it's too sweet)
Pan about 9x13 --one of those throw-away things is good

Bring a big pot full of salted water to a boil. If you put some oil in it it doesn't boil over as easily.
Drop in the macaroni (you can break it in half if you want, to make it more manageable).
Boil as it says on the box.
When it's ready, have a colander ready in the sink and pour the macaroni into it.
Then either pour a little of the Mac back into the pot or into a large bowl
Gradually add cheese, a little at a time, mixing it in as you go. Just keep adding Mac. and then cheese and mix and Mac. and cheese and mix.
Keep enough cheese to put a layer on the top.

A new thing that I hit on is to add -- after you have all the cheese mixed in -- a bottle of that Classico Alfredo Sauce. Just mix it in also, but it's a new addition to the recipe, you don't have to add it.

Spray the pan with non-stick cooking spray.
Pour the Mac and cheese mixture into the pan.
Put a layer of cheese on the top.
Put 4 or 5 pats of butter on the top.
Pour the milk slowly over the top -- take a fork and push the Mac away from the side and so you can see the milk. Add just until you can see it.

Cover the pan with foil.

Put the pan in oven at 350 degrees for about 45 min. If you make it in one of those disposable pan put it on a cookie sheet or a pizza pan.

When it's bubbling and the cheese has melted take the foil off and let the top get a little brown. Careful --don't leave it. It will burn easily.

Good luck, you'll do it fine.
Love, Mom
