Ingredients:
¾ cup saturated & trans-fat free butter-style spread
¾ cup ground flaxseed
½ cup sugar in the raw (turbinado)
1/8 cup PureVia or Truvia sweetener
2 eggs
1 tsp vanilla
1 cup whole wheat flour
1 tsp baking soda
1 tsp ground cinnamon
½ tsp salt
3 cups oats, uncooked
Optional:
- Add ½ cup chopped walnuts, raisins, dried cranberries, or semisweet chocolate chips
- Use peanut butter or almond butter in place of half of butter spread
Heat oven to 350°F. In a large bowl, beat butter-style spread and fructose until creamy. Blend in flaxseed. Add eggs and vanilla; beat well. Add combined whole wheat flour, baking soda, cinnamon, and salt; mix well. Add oats; mix well.
Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
Bake 8 to 10 minutes for a chewy cookie or 10 to 12 minutes for a crisp cookie. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.
